Chicken Orzo Soup

Ingredients

1 lb or 4 chicken thighs, diced medium

12 oz or 2 chicken breast, diced medium

¼ cup olive oil

1 large onion, diced small

2 carrots, peeled and diced small

3 stalks celery, diced small

2 shallots, minced

2 qt chicken stock or broth

½ lemon, juiced

¼ cup white wine
-
1 sprig rosemary
-
3 sprigs thyme
-
1 1/2 cups orzo
-
Salt and pepper to taste
Directions
Select the SAUTÉ preset and press START. Use the default STIR LOW setting. Once preheated, add the chicken and sauté in olive oil. Add the vegetables and continue to sauté until tender.
Press STOP, select the STEW/ SOUP preset, adjust the time to 40 minutes, and then press START.
Add the white wine, lemon and stock or broth. Add the thyme and rosemary, cover.
When timer is up, add the orzo. Select the STEW/SOUP preset, set the time to 4 minutes, press START and cover.
When done, season with salt and pepper, and serve.
