Creamy Risotto

Ingredients

2 tbsp olive oil

3 tbsp salted butter

1 shallot, minced

¼ cup onion, minced

1 ½ cups Arborio rice

½ cup white wine

3 1/2 cups chicken broth

1 sprig rosemary

1 bay leaf

1 tsp salt

½ tsp ground black pepper

¼ cup grated Parmesan cheese

1 tbsp Italian parsley, chopped

2 tbsp heavy cream
Directions
Select the SAUTÉ preset, use the default STIR LOW setting and press START. Once preheated, add the butter and oil, onions, and shallots, and cook until tender.
Add the rice and cook 1 minute. Add the wine, 3 cups of the broth, rosemary, bay leaf, salt, and pepper, and cover. Press STOP, select the RISOTTO preset and press START.
When the timer reads 3 minutes, add the remaining ½ cup of broth, cheese, parsley and cream.
Serve.
