Cauliflower Cheesy Pilaf

Ingredients

2 heads cauliflower

3 tbsp salted butter

1 medium onion, minced

½ tsp salt

¼ tsp pepper

1 sprig thyme

1 cup chicken broth
-
¼ cup white wine
-
½ cup half-and-half
-
½ cup Parmesan cheese, grated

6 oz Swiss cheese, grated

2 tbsp parsley, chopped
Directions
Chop the cauliflower in a food processor until rice size.
Select the SAUTÉ preset, set cooking time to 15 minutes and then press START. Use the default STIR LOW setting. Once preheated, add the butter and sauté the onion for 2 minutes.
Add the cauliflower and cook for 3 minutes.
After cauliflower has cooked for 3 minutes, add the broth and cover pot.
When there is 1 minute left on the timer, add the remaining ingredients.
Garnish with parsley and serve.
