Cream of Tomato Soup

Ingredients

3 tbsp olive oil

1 onion, diced

2 cloves garlic, roughly chop

1 carrot, diced

8 plum tomatoes, halved

3 cups chicken broth

½ cup basil leaves

½ cup heavy cream

Salt and Pepper to taste
Directions
In a medium pot on medium heat add the olive oil.
Add onion, garlic, and carrot, cook for about 5 minutes until tender.
Add the tomatoes and stock, simmer for about 30 minutes.
When done add basil, cream and season with salt & pepper, completely cool.
Pour into the pitcher. Press power button, set to Speed 4 using the +/- and press Start.
When smooth remove, pour into a pot and reheat.
